This Thanksgiving I’m sharing one of my Mom’s classic sweet recipes – LuLu Bars. The idea to share this recipe was born from a recent session spent thumbing through my grandma’s recipe book with Mom. Interestingly enough, while it was grandma’s archive, my mother (Mary Trcka) is cited as the author (recipe originator).
Lulus are legendary in my family. Amongst the Trcka clan they are enjoyed to the point my brother Joe and his wife Denise have competed to make the best batch – Denise usually wins!
Oddly named, simple, and ugly, tastiness is the only thing working for them. Many desserts shine because of their polished appearance. Who amongst us hasn’t consumed a pretty, but mediocre tasting cupcake? But don’t dismiss the lulu on account of their unassuming appearance; their homeliness is an asset! An asset because if not explained, people will pass by a lulu. Thus you can bring them to a potluck and return home with a gross of the chocolaty gems to enjoy by yourself! Yes desiring to return home from a potluck with your dish is a shady thing to do, perhaps even slightly pathetic. But taste these bars just once and you’ll surely find no shame in coveting them!
Only 4 or 5 ingredients! Enjoy! Without further ado, from my Grandma’s recipe archive (via Mom) here’s the recipe:
Ingredients:
- Saltine Crackers (or graham crackers but saltines are preferred)
- 1 Cup Butter
- 1 Cup Brown Sugar
- 12 ounce Semi-Sweet Chocolate Chips
- 1 Cup chopped nuts (optional)
Preparation:
Cover a cookie sheet (18″ x 13″) with crackers.
Stir butter and brown sugar over low to medium heat, bring to a boil then stir for 2 minutes. Pour evenly over crackers as to cover all.
Bake caramel and crackers in a 400-degree oven for 5 minutes. Remove from oven and cover with chocolate, lightly spreading with a spatula for even distribution.
When bars cool – cut (or break) into the desired size.
